1 lb. Sirloin steak (cut into strips)
2 cloves garlic (minced)
8 oz. sliced mushrooms
1 c. beef stock (cold)
2 Tbsp butter
2 Tbsp flour
1/2 c. cooking sherry (or white wine)
1/2 c. sour cream

Directions:
Directions:
Sauté garlic and mushrooms in 2 Tbsp butter in hot skillet. Roll beef strips in seasoned flour mixture (salt and pepper) then add to the heated skillet. Brown the meat until cooked through. Remove the meat/mushrooms from the skillet and place in a bowl. In the hot skillet make a rue by melting another 2 Tbsp butter and adding the 2 tbsp flour to create a thick paste. Add the cold beef stock to the paste and stir out lumps. The sauce should be thick; add cooking sherry and bring to a simmer. Add meat back to the hot sauce, bring back to simmer. Shut off heat and add the sour cream, stir in and serve over hot pasta.
