3/4 c. sugar 1/4 c. apple sauce 2 eggs (or 1/2 cup egg substitute) 1 c. mashed banana (2-3 very ripe bananas) 1 c. unbleached flour 1 c. whole wheat pastry flour 1/4. wheat germ 2 tsp. baking powder 1/2 tsp. salt 1/4 tsp. baking soda
Bake 350º 45-50 min. Combine sugar, apple sauce and eggs. Mix until well blended. Add banana then dry ingredients. Pour into a greased bread pan.
