4 chicken breasts, boneless and skinless
2 eggs, beaten with 1/4 c water
1/2 c flour
2 c panko crumbs

Directions:
Directions:
Slit the breasts with a knife, place between sheets of wax paper and pound flat (1/2" thick). Season. In a large heavy skillet, heat 1/4" of Crisco to 350║F. SautÚ 2 breasts at a time for 4-5 minutes each side. If cooking double or more batches, reduce time to 2 minutes per side and finish in a 350║F oven. Drain on a wire rack. Serve.
