3 cups grated zucchini
1 cup oil (salad)
1 1/2 cups sugar
3 eggs, beaten
1 tsp. vanilla

3 cups flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1 1/2 tsp. cinnamon
1 tsp. salt
1/2 tsp. ginger

1 cup chopped nuts
1 cup raisins

Directions:
Directions:
Combine the first 5 ingredients.

Sift in together and stir to blend the next 6 ingredients.

Add in the next 2 ingredients and beat for 4 minutes.

Place in greased loaf pan and bake 1 hour at 350.
