2 1/2 c. eggplant, peeled and cubed
18 saltine crackers, crumbled
1 c. shredded, sharp cheddar cheese, plus extra for topping
1/4 c. celery, chopped
1 small red bell pepper, chopped
1 small onion, chopped
1 T. butter
1/4-1/2 c. cream or evaporated milk
salt and pepper to taste

Directions:
Preheat oven to 350F. Cook eggplant in boiling, salted water for 5 minutes and drain well. Combine with remaining ingredients. Put in a 1 qt. casserole dish and top with extra cheddar cheese. Bake for 45 minutes
