Cake:
1 1/2 c. cooking oil
2 c. sugar
3 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
2 eggs
3 c. apples, peeled and finely chopped
1 c. nuts, chopped
1 tsp. vanilla
Glaze:
1 1/2 c. powdered sugar
2 T. water
1/2 tsp. vanilla

Directions:
Directions:
Cake: Preheat oven to 325F. Cream together oil and sugar. Add eggs and beat well. Sift together dry ingredients and add to oil mixture. Stir in apples, nuts, and vanilla. Bake for 1 hour and 30 minutes in a large angel food pan or 4 small nut loaf pans. Preheat oven to 325F.
Glaze: Combine all ingredients and mix well. Drizzle over warm cake.
