1 lb. ground beef
1 medium onion, chopped
2 stalks of celery, chopped
1 cup cooked rice
1 teaspoon salt
1/4 teaspoon pepper
1 can of tomato soup
4 medium peppers, seeded and halved

Directions:
Directions:
In a large bowl, mix the beef, onion, celery, rice, salt and pepper. Add half of the soup and mix well. Spoon into pepper halves and place in a skillet or large saucepan. Stir 2/3 cup water into remaining soup. Pour over the peppers. Cover and simmer 30 minutes or until the meat mixture is cooked through.
