2 c. flour
2 1/2 T. sugar
1 1/2 T. baking powder
1/2 tsp. salt
2 1/2 c. milk
2 egg yolks, lightly beaten
2 egg whites, stiffly beaten
2 T stick butter
2 T. lemon juice
1 tsp. grated lemon peel
1 tsp. oil for griddle
powdered sugar

Sift flour, sugar, baking powder and salt together in large bowl. Combine milk, egg yolks, butter, lemon juice and lemon peel in another bowl and mix thoroughly. Stir milk mixture into dry ingredients and mix until just moistened - DO NOT OVERMIX. Gently fold in egg whites. Preheat griddle to 400. Brush griddle with oil. Using 1/4 cup, pour batter onto skillet forming each pancake. Cook pancakes until done on each side, usually 3 minutes. Serve warm and sprinkle with powdered sugar.

The secret to having light pancakes in this recipe is to beat the egg whites until very stiff and gently fold into the batter.
