1/4 c. orange juice
4 fillets of orange roughy
safflower oil or olive oil
1 T. tarragon
1 T. coursely ground black pepper
grated zest of two oranges

Directions:
Directions:
Preheat oven to 325. Pour orange juice into shallow baking dish, long enough to hold fish. Brush fish lighly with oil; place in baking dish. In a bowl, combine tarragon, pepper and grated orange peel. Sprinkle mixture on top of fish, patting it to lightly form thin crust. Bake for 20-25 minutes, until fish flakes easily when tested with a fork. Remove fish from baking dish and serve with sliced oranges and wild rice.
