1 1/2 c. oil
1 1/2 c. sugar
1/2 c. brown sugar
3 eggs
3 c. whole wheat flour
1 tsp. baking soda
1/2 tsp. nutmeg
2 tsp. cinnamon
1/2 tsp. salt
3 1/2 c. tart, peeled apples, diced
1 c. English or black walnuts
2 tsp. vanilla
Glaze:
3 T. butter
3 T. brown sugar
3 T sugar
3 T heavy cream
1/4 tsp vanilla

Directions:
Directions:
Preheat oven to 325 . Combine oil and sugar in blender and mix well. Add eggs one at a time, beating thoroughly each time. Sift together flour, baking soda, cinnamon, nutmeg and salt. Add to oil and egg mixture and blend thoroughly. Add chopped apples, nuts and vanilla and mix well, using spatula or spoon. Pour batter into a greased and floured 10-inch tube pan. Bake at 325 for 1 1/4 hours or until knife inserted comes out clean. Remove from oven, but leave in pan 20 minutes before turning out onto a platter or plate. Prepare glaze.
Glaze:
Combine all ingredients for glaze in a heavy sauce pan and bring to boil over med. heat. Boil 1 minute. Remove from heat and spoon over warm cake. Serve warm with ice cream!
