1 lb. dried great Northern beans
1 meaty hambone or 1-2 c. chopped ham
3 medium onions, chopped
3 garlic cloves, minced
3 celery stocks, chopped
1/4 c. chopped fresh parsley
1 c. mashed potatoes or 1/3 c. instant potato flakes
salt and pepper to taste
parsley to garnish

Directions:
Place beans in pan with enough water to cover. Bring to a boil and continue boiling for 4-5 minutes. Remove from heat. Soak beans for 1 hour. Drain and rinse beans. In large pot, place beans, ham, 3 quarts water. Bring to boil. Reduce heat and simmer 1 hour. Add onions, garlic, celery, parsley, potatoes, salt and pepper. Simmer 1 additional hour, or cook in crock pot on low setting. Garnish with parsley and serve.
