6 c. water
4 c. walnuts halves
1/2 c. sugar
salad oil
salt to taste

Directions:
Boil water in a 4 qt. saucepan over high heat. Add walnuts and boil for one minute. Drain and rinse with hot water. In a large bowl with spatula, gently stir warm walnuts with sugar until the sugar is dissolved. In a large frying pan, heat about 1-inch of salad oil to 350F. With slotted spoon, add about 1/4 of the walnuts to the hot oil. Fry until golden brown, stirring often for even cooking. With slotted spoon, place walnuts in coarse sieve or fine mesh wire rack to drain. Sprinkle lightly with salt. Toss lightly to keep walnuts from sticking together. Transfer to waxed paper to cool. Store in a tightly covered container.
