2 1/2 c. all-purpose flour
1/2 c. granulated sugar
1/2 c. brown sugar, packed
3 1/2 tsps. baking powder
1 tsp. salt
3 T. vegetable oil
1/3 c. milk
1 1/4 c. mashed bananas (2-3 medium)
1 egg
1 c. walnuts or pecans, chopped

Preheat oven to 350F. Grease bottom only of a 9X5X3-inch loaf pan. Mix all ingredients and beat with an electric mixer for 30 seconds. Pour into pan. Bake until toothpick inserted in middle comes out clean, about 65-70 minutes. Let sit in pan for 10 minutes then remove from pan and cool completely on wire rack. To store, wrap in plastic wrap and refrigerate for up to one week.
