1 1/2 lbs. boneless, skinless chicken breasts, cut into 1-inch chunks
1 T. oil
4 stalks of celery, chopped
4 carrots, chopped
4 green onions, sliced
1 c. chicken broth
1/3 c. soy sauce
1/4 tsp. red pepper flakes
1/4 tsp. ground ginger
1 garlic clove, minced
8 ozs. beansprouts
8 ozs. water chestnuts, sliced
1/4 c. cornstarch
1/2 c. water

Directions:
In a skillet, brown chicken with oil (this step can be skipped if you don't have time). Put browned chicken in the crockpot. Add all the remaining ingredients except the cornstarch and water. Stir and cover. Cook on lowest setting for 6-8 hours. Before serving, turn the crockpot to high. Mix the water and cornstarch until dissolved. Add to the crockpot and stir well. Keep cover ajar to allow steam to escape, cook until thickened (about 15-30 minutes). Serve over chow mein noodles or rice. Recipe may be double for 5 quart crockpots.
