1 egg
1/2 cup milk
1/4 cup cooking oil
1 1/2 cups flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp salt
1 cup fresh blueberries

Directions:
Directions:
Beat the egg slightly with fork. Stir in milk and oil. Sift dry ingredients together and mix in just until moistened. Stir in blueberries. Batter will be lumpy. Fill greased muffin tins two-thirds full. Bake 20-25 minutes at 400F. Makes 12 muffins.
