1/4 c chopped sweet red pepper,
1 c frozen corn,
1/4 c chopped onion ,
1/2 tsp salt,
2 tbsp finely chopped jalapeno pepper,
1/4 tsp pepper,
3 garlic cloves, minced ,
3 green onions, chopped,
1 tbsp olive oil ,
Soy Sauce, optional,
2 cups COOKED rice,

Saute onion, red pepper, jalapeno and garlic in oil til tender.Add rice, corn and salt/pepper: cook and stir til heated through. Sprinkle with green onion. Serve with soy sauce if desired.
Yield 4 servings.
