2 1/2 cups sifted cake flour
1 2/3 cup sugar
1 1/4 teaspoon baking powder
1 1/4 teaspoon baking soda
1 teaspoon salt
2/3 cup buttermilk
2/3 cup shortening
3 large ripe bananas
2 large eggs
1 teaspoon vanilla

Directions:

Sift together the dry ingredients. In a mixing bowl, make a well. Set in shortening and half of the buttermilk and all of the bananas. Beat 2 minutes. Add remaining buttermilk, eggs, and vanilla. Beat 2 more minutes. Bake 40 minutes at 350.
