Crust enough salted soda crackers to make 1/2 to 1 c and mix with 1/4 to 1/2 c grated parmesan cheese. Wash and trim one medium signed eggplant and cut into 1/2-inch slices. Spread mayonnaise on one side of slice. Dredge with crumbs spread mayonnaise on 2nd side and dredge with crumbs. Place slices on un-greased baking pan. Put into 425 degree oven until browned and tender. About 10 to 15 minutes may turn if they do not brown evenly.
