2 tablespoon salad oil
6 boneless pork chops
1 medium onion, diced
1 3/4 cup apple juice
2- 16oz. cans sauerkraut (drained)
2 medium potatoes, cut into 1" thick slices
2 cooking apples, cored and chunked
2 teaspoon brown sugar
1/2 teaspoon salt
1/8 teaspoon pepper

Directions:
Directions:
Cut pork chops into cubes and brown in the oil with the onions until cubes are brown and onions are tender. Add apple juice and stir to loosen brown bits from the bottom of the skillet. In a 13 x 9 baking dish, combine all ingredients, cover and bake at 350 for 2 hours or until potatoes are fork tender and pork cubes are cooked through.

You can baste the casserole with some of the liquid in the baking dish while it is baking.
