1 lb small red potatoes 1 tbsp olive or vegetable oil 1/2 tsp salt 1/8 tsp pepper 2 tbsp grated parmesan cheese
Cut the potatoes in 1/4 inch think slices; toss with oil. Place in a single layer in a greased 13 x 9 x 2 inch-baking pan. Sprinkle with salt, pepper and parmesan cheese. Cover tightly with foil. Bake at 350 degrees for 40 minutes or until tender.
