1-16 oz. (454 g) pkg. white beans
5 cups cold water
8 slices bacon, diced
1 large onion, chopped
1 tsp. salt
1-6 oz. (170 ml.) can tomato paste
1/3 cup brown sugar
1/4 cup maple syrup

Directions:
Directions:
Soak beans in water overnight in a large saucepan. Bring to a full rolling boil, while covered, for 2 minutes. Set aside for 1 hour. Add bacon, onion and salt. Return to a boil. Reduce heat and simmer, covered, for 40 minutes. Pour mixture into a covered casserole or roasting pan. Stir in tomato paste, sugar and syrup.
Bake, covered, at 300 F for 4 hours or until tender. Add more water, if necessary, during cooking to give consistency desired.
