2 butternut squashes (about 1 lb. each)
2 T. softened butter, divided
salt & pepper to taste
1 orange, zested
3 T. honey
pinch of ground cinnamon

Directions:
Directions:
Preheat oven to 350 . Halve the squashes lengthwise and remove the seeds and strings. Rub the insides with the butter and season with salt and pepper. Place on a baking pan, skin side down. Bake for 30-40 minutes or until fork-tender. Remove squash from oven, scoop out the flesh and place into food processor. Add the orange zest, honey, cinnamon, and remaining butter. Puree until smooth. Season to taste and serve.
