2 lbs. cheese tortellini
1 small zucchini
1 small yellow squash
1 carton of grape or cherry tomatoes, sliced in half
8 ozs. cheddar cheese, cut into small cubes
8 ozs. provolone cheese, cut into small cubes
8 ozs. hard salami, cut into small cubes
1/2 c. red onion, finely chopped
1 large can of black olives, sliced
3/4 c. prepared italian dressing
salt & pepper to taste

Directions:
Cook tortellini according to package directions, do not overcook! Rinse with cold water until cooled completely. Thinly slice zucchini and yellow squash into bite-sized pieces. In a large bowl, add everything together and toss gently with dressing. Refrigerate for at least 1 hour before serving.
