1 tbsp. olive oil
6 boneless chicken breast halves
1 cup sliced mushrooms (optional)
3/4 cup Pace picante sauce
1/4 cup sliced pepperoni, sliced into short, thin strips
1 tbsp. dijon-style mustard
1 tsp. oregano
1 small green pepper, cut into short, thin strips
1 medium tomato, diced
1/4 cup sliced ripe olives (optional)
Cooked pasta, to serve

Directions:

Heat oil in large skillet over medium-high heat. Lightly brown chicken on one side, about 2 minutes. Turn chicken over; add mushrooms (if using). Combine picante sauce, pepperoni, mustard and oregano; mix well. Pour over chicken; cover and cook over medium heat until chicken is cooked through, about 7 to 9 minutes.

Remove chicken to serving platter; add green pepper to skillet. Cook over high heat until pepper is tender, about 3 minutes. Drain any accumulated juices from chicken into skillet. Add tomato; cook and stir until sauce has thickened, about 1 minute. Spoon sauce and chicken over pasta; sprinkle with olives (if desired).

Serve with grated locatelli or other hard Italian cheese. Use turkey pepperoni to reduce the amount of fat.
