Ingredients:  
1 lb ground beef
1 red or green pepper chopped-opt
2 medium onions, chopped
1 c grated cheddar cheese
2 tbsp salad oil
1 tsp. Salt
1 (16 oz) can tomatoes
1 clove garlic, crushed
1 (8 oz) can tomato sauce
1/2 tsp. Oregano
1 (6 oz) cans tomato paste
4 medium zucchini, sliced
1/2 c parmesan cheese

Directions:
Directions:
Sauté ground beef and onions in oil until brown and meat is crumbly. Add tomatoes, sauce, paste and bell pepper; simmer 10 minutes. Add cheese, salt, garlic, oregano and zucchini. (if desired, add any leftover vegetables.) Cover and simmer until vegetables are tender; or turn into casserole and bake at 350 degrees for 45 minutes. Sprinkle top with parmesan cheese.
