1 lb. boneless/skinless chicken
1 packet dry taco mix
corn or flour tortillas
lettuce, cheese, tomato, whatever else you like with tacos

Directions:
Directions:
Put defrosted chicken into crock pot and sprinkle taco seasoning over it. Cover and cook on low for 3-4 hours. With a fork, pull chicken apart until it is in small enough pieces. Warm tortillas
and fill with chicken and whatever else you like.

I used to think chicken tacos were a pain until I discovered this way to do it. The chicken comes out perfectly seasoned and very tender. You can also use it for chicken taco salad, chicken quesadillas, etc.
