1 tbsp. oil
1 lb. boneless, skinless chicken breasts, cut into strips
3 c. cut up vegetables (carrots, red pepper, broccoli)
1 141/2 oz. can fat free chicken broth
2 c. uncooked white minute rice
1/3 c. Zesty Italian dressing

Directions:
Directions:
Heat oil in large skillet on medium heat. Add chicken; cook and stir until lightly browned. Add vegetables; cook and stir 3-5 minutes or until crisp/tender. Stir in broth and bring to a boil. Stir in rice and dressing; cover. Reduce heat to low. Cook 5 minutes or until liquid is absorbed.
