1 lb. ground beef
2 c. Monterey jack cheese, shredded
1 c. cheddar cheese, shredded
1 small onion, chopped
1/2 c. sour cream
2 tbl. parsley
1/4 tsp. salt
1/4 tsp. pepper
15 oz. tomato sauce
2/3 c. water
1/3 c. green peppers, chopped
1 tbl. chili powder
1/2 tsp. oregano
1/4 tsp. ground cumin
1 garlic clove, minced
8 flour tortillas
1 c. salsa

Mix cheeses, onion, sour cream, parsley, salt and pepper and set aside.

Brown hamburger, and add the tomato sauce, water, green pepper, chili powder, oregano, cumin and garlic, and heat to boiling, stirring occasionally. Reduce heat and simmer uncovered for 5 minutes.

Add the cheese mixture, and stir to combine.

Spoon about 1/2 c. of the hamburger mixture into each tortilla and roll tortilla around filling. Arrange the rolled tortillas in a 13 x. 7 inch baking dish. Top with salsa. Bake uncovered at 350 for 1/2 hour or until hot and bubbling.
