1 c. sugar
2 tsp. salt
1 tsp. ground cumin
1 tsp. ground cinnamon
1 tsp. coarsely ground black pepper
1/2 tsp. ground red pepper (cayenne)
1 large egg white
6 c. unsalted mixed nuts

Directions:
Directions:
Preheat oven to 325. Grease two cookie sheets.
In a small bowl, stir the sugar, salt, cumin, cinnamon, black pepper and red pepper. In another bowl, with wire whisk, beat the egg white until formy. Stir the nuts into the egg white. Add sugar mixture, toss until nuts are thoroughly coated. Divide nut mixture between prepared cookie sheets, spreading evenly. Bake nuts for 25 - 27 minutes or until golden brown and dry, stirring twice during baking. Transfer nuts to waxed paper to cool. Store nuts in tightly covered container at room temperature - will keep up to 1 month.
