1/2 stick butter
2 onions, peeled and sliced (optional)
9 or 10 yellow crookneck squash, sliced (8 cups)
1 teaspoon salt
1/2 teaspoon ground black pepper

Directions:
Directions:
Heat the butter until foaming in a large pan. Add the onion if using and cook over moderate heat for 5 minutes, stirring often. Add the sliced squash, salt, and pepper and stir well to coat the squash. Reduce temperture to low and cook, covered for 20 minutes or longer, stirring often, until squash if very tender and yielding. Taste to see if you need more salt. Serve hot.
