1 package (3 oz) prociutto
1 small jar drained sun dried tomotoes
Fresh basil
1/2 can black olives
12 medium scallops

Directions:
Directions:
Preheat oven 350 degrees Place olives, tomatoes, and about a handful of basil in food processor and blend to the consistency of pesto. Set aside
Pat dry and salt scallops
Take 1/2 slice of prociutto and wrap around scallop. Continue w/ rest of scallops. Place scallops in casserole or baking dish. Coat scallops with tomatoe mixture. Bake for 15 min
