2 T olive oil
4 chicken breasts, boneless and skinless
1 bottle of champagne (drinking quality)
2 c 1/2&1/2
8 oz mushrooms, sliced
1 onion, chopped

Directions:
Directions:
Heat oil in a large heavy skillet. Sauté onions and mushrooms. Add chicken breasts and cook thru, turning once. Remove chicken and cover. Add 2 cups of champagne and 1/2&1/2. Increase heat and reduce mixture to 1/2 original volume. Return chicken to skillet. Continue reduction to desired thickness.
