1 pkg (3.5 oz.) pepperoni slices (or crumbled, cooked sausage left over from breakfast)
1 can (3.5 oz.) olives, chopped
2 T fresh parsley, snipped (or 1 t dry)
1/2 C mozzerella cheese, shredded
2 T flour
1 garlic clove, pressed
2 pkgs (11 oz. each) refrigerated French bread dough
1 egg (just the white)
1 t Italian seasoning
2 T fresh grated parmesan cheese
1 can (15 oz.) pizza sauce, warmed (optional)

Preheat oven to 375. Dice pepperoni/sausage. Combine with olives, parsley, mozzerella, flour and garlic and mix together. Place bread dough, seam side up, on counter and slice lengthwise halfway through to center of loaf. Spread open flat and lightly sprinkle additional flour over. Create a well down center of each loaf and fill with pepperoni mixture. Gather up edges over filling, pinching firmly to seal. Place loaves seam side down, in an X pattern or braid. (Should look like a DNA double-helix.) Leave two 1 inch openings in the center of the twists to allow the bread to expand while cooking. Beat egg white and seasoning and brush over dough twists. Cut a 3 inch slit in each of the top sections of the twists to reveal filling and allow heat escape. Grate parmesan cheese over loaf and bake on pizza stone or baking sheet 30 minutes or until deep golden brown. Cool 10 minutes and slice. Serve with warm pizza sauce.
