pot roast, any size

garlic salt, pepper, basil, oregano
flour
1-2 T oil

1 C beef broth (bouillon cube dissolved in hot water)

2 C carrots (baby or sliced)
3 onions (quartered)
4 potatoes (quartered)

Directions:
Directions:
Rub thawed roast in mixture of spices - or I just sprinkle them each over all sides of the meat.
Sprinkle all over with flour to seal in juices.
Brown/sear all sides of meat in hot oil.
If CROCK POT: Put meat in and surround with potatoes and onions. Pour broth over all and sprinkle with extra spices if you want. Heat all day on low or 4-5 hours on high. Add carrots half way through. (no biggie if you add them at beginning, they just get super soft)
If OVEN: Bake at 325 in covered dish 20 min/ per lb of meat.
For gravy, heat juices; mix cold water and cornstarch or flour and stir into juices until thickened.

Great for company. I always do it in Crock Pot - easy to put in before church. Searing is a hassle, but is worth it to keep it moist and it just falls apart.
