1/2 cup minced onion
1 lb. ground beef
1/4 tsp. oregano
1/4 tsp. pepper
1 tsp. salt
Garlic powder or cloves to taste
3 T. parsley
20 ounce can tomatoes
8 ounce tomato paste
1 lb. cottage cheese (or sub. 15 oz. ricotta cheese)
12 ounces shredded mozzarella cheese
8 ounces Parmesan cheese
Lasagne noodles

Directions:
Directions:
Saute' onion in 1 T. oil in skillet. Add beef. Brown and drain. Add seasonings, tomatoes, tomato paste and 2 T. parmesan cheese. Simmer covered 30-45 minutes. Preheat oven to 350.
Cook lasagne noodles. In 12" x 8" x 2" pan arrange 1/3 meat sauce, layer of noodles, layer of mozzarella cheese, 1/3 cottage(ricotta) cheese, 2 T. parmesan cheese. repeat twice, ending with sauce and parmesan cheese.

Bake 30 minutes.

This is my own special lasagne recipe that I have been making since I was 18!! Everybody loves it and can never understand why I would buy lasagne out at a restaurant when I can make it so well!!
