2 lbs. pinto beans
1 onion (chopped)
2 cloves fresh garlic (minced)
1 green bell pepper (chopped)
1 bunch cilantro (chopped)
2 10 oz. cans of Rotel Italian tomatoes
1 lb. ground beef
1 tbsp butter
salt to taste

Directions:
Directions:
Cook beans and 1 can of rotel following directions on package. About 30 minutes before they are done melt butter in pan and saute onion, garlic and bell pepper on medium heat for 3 to 5 minutes. Transfer to pot of beans and add 1 can of rotel.

Cook ground beef, drain fat and transfer to pot of beans. About 10 minutes before serving add cilantro and stir well.

Depending one how well you like cilantro will determine how much to use. I only use about 1/4 of the cilantro.
