3 eggs
1 cup oil
2 1/4 cup sugar
3 cups flour
1 tsp salt
1 1/4 tsp baking powder
3 tsp cinnamon
3 tsp vanilla
2 cups grated peeled zucchini
1/2 cup chopped pecans

Directions:
Directions:
Blend dry ingredients together including the 1/2 cup nuts. Beat the eggs until light, add sugar, vanilla and oil, blend well. Stir zucchini into egg mixture. Blend the dry ingredients into the wet mixture. Turn out into 2 loaf pans that have been greased and floured. Bake at 350 for 1 hour or until test done. (Stick a toothpick in the center, if it comes out clean, they are done.)
