Stuffed Pork Loin Recipe

1 box stuffing mix
1 boneless center cut pork loin roast (3 lbs)
3 tbl. olive oil
1/4 c. flour
1 tsp. salt
1/2 tsp. pepper

Directions:
Directions:
Heat oven to 450. Prepare the stuffing according to package instructions.

Place roast, fat side up, on clean surface, cut along length of pork loin, do not cut all the way through. Spread pork apart. Spoon stuffing down center of pork. Close and secure with twine.
Rub pork with 1 tbl. olive oil. Stir together the flour, salt and pepper and rub the seasoned flour mixture evenly over the pok.

Roast in 450 oven for about 10 minutes - REDUCE temperature to 350 and continue roasting another 55 to 60 minutes, or until meat themometer reads 150 to 155 - let sit 15 minutes - slice and serve
