"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
4 pounds chicken wings 1 cup soy sauce 1/2 cup dry red wine 1/2 cup + 1 tablespoon sugar 1/4 teaspoon ground ginger
Preheat oven to 400º. Line large baking sheet with rim with aluminum foil.
Arrange wings skin sides down in the roasting pan large enough to hold all in 1 layer.
In a saucepan heat remaining ingredients over moderately low heat, stirring until sugar dissolves. Pour sauce over wings. Bake wings in middle of oven for 45 minutes. Turn wings over and bake until liquid is thick and sticky - about 45 minutes more.
