8 slices white bread*
8 oz Mozzarella cheese
1 egg - beaten
chopped parsley
salt
pepper
flavored breadcrumbs
1/4 c. Romano cheese
olive oil for frying

Directions:
Directions:
Trim the crust from the bread. Slice Mozzarella into 4 slices. Put a slice of mozzarella on a slice of bread, sprinkle with parsley and top with another slice of bread. Beat egg with 1/2 the Romano cheese some parsley, salt and pepper to taste. Mix the breadcrumbs with the remaining cheese. Dip each sandwich one at a time in egg and coat well with bread/cheese mixture. Fry in hot oil slowly until golden brown. Cut into triangles and serve.
