1/4 cup butter
1 cup sugar
1 egg
3/4 cup orange juice (juice of one orange and water to make 3/4 cup)
2 cups flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
grated rind of one orange
1 1/2 cup cranberries, fresh or frozen
1/2 cup chopped pecans or walnuts

Directions:
Directions:
Put butter, sugar, and egg in mixing bowl, beat smooth. Stir in juice. Stir in all dry ingredients until moist. Batter will be lumpy. Fill muffin tins 3/4 full, or loaf pan, and bake at 350, 20-25 min. for muffins or 1 hour for loaf.
