1/2 Pork Tenderloin 3 Eggs beaten
2 tsp. Salt Finely crushed Cracker Crumbs
1/4 tsp. Pepper Bacon Fat
Flour for dredging

Directions:
Directions:
Slice the tenderloins. Beat, (flatten) each slice until thin. Mix flour, salt and pepper. Dredge each slice in the flour, then the beaten egg and then the cracker crumbs. Fry in bacon fat on each side until golden brown. Serve with bread/bun, tomato and miracle whip.

Doris Lee Horstman (Herb's Mother) used to fix pork tenderloin like this when Herb was growing up. She usually fixed it for him whenever we would get to visit with her and we all loved it.
