2 1/2 lbs. small red potatoes 3 tablespoons olive oil salt pepper 2 tablespoons white wine vinegar
Preheaet oven to 450 degrees.
Scrub potatoes. Quarter the potatoes and toss with 3 tablespoons olive oil, and season with salt and pepper. Arrange on a baking sheet in a single layer. Roast at 450º for 50 minutes. Lightly toss with 2 tablespoons white wine vinegar before serving.
