1/4 C. sesame seeds
1/2 C. bread crumbs
1 egg
4 boned, skinned, flattened chicken breasts
2 tbsp. vegetable oil
2 tbsp. butter

Sauce:
5 tbsp. sugar
4 tsp. soy sauce
1/3 C. fresh lemon juice
1 C. water
1 tbsp. cornstarch

Directions:
Directions:
Combine seeds and crumbs on waxed paper. Beat egg with fork. Dip chicken in egg, then crumbs. Pat lightly, set aside for 10 minutes. Measure sauce ingredients in a 2 cup measure. Heat oil and butter in skillet. Cook breasts until golden brown (4-5 minutes each side.) Remove breasts, then add cornstarch mixture to skillet. Stir until thick and bubbly. Serve over chicken on a bed of white rice.
