"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

1/2 pound bacon, diced
1 pound ground beef or pork
1 large onion, chopped
1 (15 oz) can pork and beans
2 (16 oz) cans crushed tomatoes

1/2 cup yellow corn meal
1/2 cup all-purpose flour
2 Tbsp granulated sugar
2 tsp baking powder
1/2 tsp salt
1 egg, beaten
1/2 cup milk
2 Tbsp butter or margarine, melted
1 (4 oz) can diced green chiles, drained

Fry bacon in 3-quart saucepan until crisp. Drain. Add crumbled meat and chopped onion. Brown evenly and drain. Stir in beans and tomatoes. Season to taste with salt and pepper. Bring to a boil. Reduce heat, cover and simmer, stirring occasionally, approximately 15 - 20 minutes.

Combine cornbread ingredients and mix until smooth. Grease inside edge of 2-quart casserole dish. Spoon in heated meat mixture. Spoon cornbread topping over the top. Bake in a pre-heated 425 oven, 25-30 minutes or until cornbread is golden brown.
