1 12 oz. package of sixteen kinds of beans
1 teaspoon baking soda
2 bay leaves
4 cloves or garlic, minced
1 pound smoked sausage
2 cups onions, chopped
2 cups celery, chopped
2 cups bell pepper, chopped
1/2 frying size chicken
2 cans rotel tomatoes
1 can tomatoes
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon white pepper
1/2 teaspoon red pepper

Directions:
Directions:
Wash beans. Cover with water, add 1 teaspoon soda and soak overnight, Drain. Cover with 3 qts. of water, bay leaves and garlic. Cover and simmer 1 hour. Add sausage, onions, celery and bell pepper. Simmer uncovered 1 hour. Add all other ingredients and simmer until chicken is done Remove chicken from bone and return to soup. Serve with chopped green onion.
