2 c. grated zucchini 3 beaten eggs 1 c. oil 1 tsp. vanilla 1 tsp. baking soda 1 tsp. cinnamon 1/2 tsp. baking powder 3 c. flour
Grate zucchini with skin and let drain while preparing. Mix all the ingredients except the flour and zucchini well. Add the flour and add then the zucchini. Bake in 2 well greased loaf pans at 350º F for one hour or until done.
