"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali
This recipe for Meatloaf, by Dawn Hunter, is from The Hunter Family Cookbook,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
1 pound chuck beef 1 egg 1 c bread crumbs 1/3 c catsup salt & pepper
Mix all ingredients together by hand. Place in loaf pan and bake for 50 mins @ 350º.
For a lower fat version, once meat mixture has been placed in loaf pan, invert loaf pan onto baking sheet, allowing the meatloaf to fall on baking sheet. Remove loaf pan and bake as directed above. Excess fatty juices will run off the loaf vs. being absorbed into the meatloaf.
