Rhubarb Strawberry Pie Recipe

3 cups fresh rhubarb
1 cup sugar
1/2 tsp. fresh grated orange peel
3 tbsp. flour
1/8 tsp salt
2 tbsp. melted butter
Crust for 9 in. pie

Directions:
Directions:
Cut rhubarb into pieces approximately 1 inch. In a large mixing bowl, comb ine all ingredients except the melted butter. Fold with rubber spatula until rhubarb is mostly coated. Pour into pie shell on bottom crust. Dribble melted butter on top and cover with top crust (a lattice top looks especially pretty). Place in preheated oven 425º for about 15 minutes. Turn oven down to 400º and bake for an additional 40 minutes or until rhubarb is soft when cut into with a sharp knife and crust is golden.

I add about a cup of fresh sliced strawberries and a little more sugar to cut down on the tartness of the rhubarb. It makes a great combination.
