2 slices thick bacon cut into slivers
1/2 T olive oil
2 medium cloves garlic, minced
2 T shallots, minced
1-16oz package frozen peas, thawed
1/2 cup fresh basil leaves, slivered
Salt & Pepper

Directions:
Directions:
Saute bacon in large skillet over medium heat. remove cooked bacon with a slotted spoon and drain on paper towels. Using the same pan, pour off all but 1 T bacon drippings. Add olive oil and saute garlic and shallots for 2 minutes. Add peas and basil. Cook until peas are heated through, 4-5 minutes. Just before serving, add cooked bacon and season with salt and papper to taste.

It's probably worth doubling the recipe. It's a lot of work for a small group. It's very tasty and makes a nice holiday vegetable. A great way to fancy-up frozen peas.
